I love to make up a batch of candied nuts at Christmas, and it’s so easy to make them in your crockpot and free up your oven!

Almonds and pecans are coated in a sweet and salty spice mix, and you’ll probably want to make a double batch as they are super addictive!

How to make candied nuts in the slow cooker

  • Add the nuts to an oiled Crockpot.
  • Whisk the egg whites and mix in the vanilla, butter and spices.
  • Pour over the nuts and stir to combine.
  • Cook in the Crockpot, stirring every 30 minutes.
  • Add the water .
  • Lay the nuts on parchment paper to let cool.

How long do they keep?

Once the Crockpot candied nuts have cooled completely, store them in an airtight container at room temperature. Keep them out of direct sunlight and they will keep well for up to 3 weeks.

Can you freeze them?

To extend the shelf life of the spiced nuts, you can freeze them for up to 2 months. They can be enjoyed right from the freezer too, no need to defrost them, and they are super yummy like this!

How do you serve them?

I love to set out a few bowls of these for snacking when we are enjoying some drinks, but they are also great to add to salads, baked goods and desserts.

Homemade food gift

These slow cooker candied nuts make for a great food gift to give to friends and family during the holidays, and this recipe makes about 4 cups. Once cooled, place them in a nice glass jar with a gift tag and some ribbon for an easy and delicious present!

Tips!

  • I used a mix of almonds and pecans, but you can use any nuts you like. Walnuts and peanuts work well.
  • Stir the nuts every 30 minutes so that they are evenly coated and they don’t burn.
  • Allow the nuts to cool completely before storing.

Ingredients

  • 2 cups whole raw almonds 284 grams
  • 2 cups whole raw pecans 250 grams
  • 2 egg whites 70 grams
  • ¾ cup dark brown sugar 160 grams
  • ¾ cup granulated sugar 150 grams
  • 2 teaspoons vanilla bean paste 8 grams
  • 2 tablespoons salted butter 28 grams, melted (¼ stick)
  • ½ tablespoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ cup water 57 grams

Instructions

  • Spray the inside of your crockpot with nonstick spray.

  • In a large bowl, toss all of the nuts to combine, then add to the crockpot.

    2 cups whole raw almonds, 2 cups whole raw pecans

  • In a small bowl, whisk the egg whites until foamy. Add the sugars, vanilla bean paste, melted butter, and spices. Stir to combine.

    2 egg whites, ¾ cup dark brown sugar, ¾ cup granulated sugar, 2 teaspoons vanilla bean paste, 2 tablespoons salted butter, ½ tablespoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg

  • Pour the egg/sugar mixture over the nuts in the crockpot. Stir well to coat.

  • Cover and set to cook on HIGH for 3 hours, stirring every 30 minutes as it caramelizes.

  • During the last stir, add the water.

    ¼ cup water

  • Lay out parchment paper then spread cooked spiced nuts in a single layer to cool completely.

Makes 4 cups of nuts. Serving size is ½ cup.
