Funfetti Baked Donuts are a festive treat that will brighten your day! You don’t have to feel guilty eating these lightened-up donuts.

I don’t care how old you are–sprinkles are fun! It’s really hard not to smile when you top something with sprinkles, especially when that something happens to be a donut. Oh, and under 150 calories? I know, they seem too good to be true!

You probably know about my donut obsession during quarantine. Cinnamon Roll Baked Donuts, Red Velvet Donuts, and now these. It’s really hard to pick a favorite, but if you MADE me answer, I’d say these ones.

Funfetti Baked Donuts has to be the most kid-friendly recipe you could make, too. The ingredients and directions are simple, and what kid doesn’t like sprinkles

Since sprinkles come is so many color varieties these days, I’m getting excited about the possibilities. Red, white, and blue sprinkles for 4th of July, red and pink for Valentine’s Day, black and orange for Halloween… you get the picture.

I know I’m going to get questions about how to store these. They keep in an air-tight container at room temperature for 2 days, at least in my experience. You could also refrigerate them, but I find that they can get a little gummy that way. Still delicious, though!

If you don’t have donut pans, you could definitely make these into cupcakes. I’m going to try it as a whole cake, too. I’m not sure yet what the baking time on that would be, but I’m excited to experiment!

Do keep in mind that even though these donuts are much better for you than the deep-fried version, they still have a lot of sugar per serving. I save these for a special treat once in a while. 🙂

Ingredients

FOR THE DONUTS

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup sugar
  • 3/4 cup unsweetened apple sauce
  • 2 tbsp nonfat, plain Greek yogurt
  • 3 tbsp almond milk (or milk of choice)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup sprinkles

FOR THE ICING

  • 1/3 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1-2 tsp almond milk (or milk of choice)

Instructions

MAKE THE DONUTS

  • Preheat oven to 350F. In a medium-sized bowl, whisk together dry ingredients: flour, sugar, baking powder, and baking soda.

  • In a separate bowl, beat together the wet ingredients: apple sauce, yogurt, egg, milk, and vanilla.

  • Slowly whisk the wet ingredients into the dry until just fully combined. Fold in sprinkles, reserving about a tbsp or so to sprinkle on top.

  • Evenly divide batter between 9 donut molds or muffin tins. Mine came out to about 3 tbsp of batter per mold.

  • Bake until just cooked through, when a tooth pick inserted comes out clean, about 12-15 minutes. Mine were perfectly done at 13 minutes. Try not to over bake! Let cool for about 5 minutes.

MAKE THE FROSTING

  • Whisk vanilla and 1/2 tsp milk into powdered sugar. Continue adding in 1/2 tsp at a time until you get the consistency you want. Less milk will create a frosting, like in the pictures above. More milk will create a glaze that you can dip the donuts in.

  • Frost donuts/cupcakes with a mini spatula, or drizzle icing over the top. Add reserved sprinkles to the tops before the icing sets.
