Any ranch lovers out there? This Ranch chicken and potatoes is a recipe you don’t want to miss! I always love red-skinned potatoes but mix them with ranch, now that is dangerous!

After we’ve had this easy dinner idea I always make a mental note to double it for leftovers because my family gobbles this right up! Yes, even my pickiest eater.

I would even dare to say this is the best Instant Pot chicken pot recipe I have had!

BUT that shouldn’t stop you from trying other Instant Pot recipes like our Instant Pot Bone-in Ribs recipe, Instant Pot Breakfast Hash, and our Instant Pot Cheesy Penne Pasta recipe. They are all so good. When I say I use my Instant Pot every day, it’s not an exaggeration.

Ingredients needed for Instant Pot Parmesan Ranch Chicken and Potatoes:

  1. Boneless skinless chicken breast
  2. Baby red potatoes
  3. Olive oil
  4. Salt
  5. Ground black pepper
  6. Garlic Powder
  7. Dried thyme
  8. Dried basil
  9. Dried oregano
  10. Ranch dressing mix (just the dry mix – don’t prepare the dressing)
  11. Chicken broth
  12. Parmesan cheese
  13. Butter

Kitchen tools needed for Instant Pot chicken and potatoes:

  • Instant Pot (THIS is one of my favorite models)
  • Two small mixing bowls (THIS set is great for meal prep!)
  • Large mixing bowl/serving platter

How to make instant pot Parmesan ranch chicken:

Start by adding the chicken and quartered baby red potatoes into the Instant Pot and drizzle them with the olive oil and toss the chicken and potatoes until they are coated with the olive oil.

Then, in a small bowl, mix together the salt, ground black pepper, garlic powder, thyme, basil, oregano, and two tablespoons of the ranch dressing mix.

PRO TIP: Get yourself the bulk container of ranch dressing mix from Costco since you will probably make this often. 😉

Now, sprinkle the seasonings mixture over top of the chicken and redskin potatoes, then toss them together to make sure they all are seasoned well.

After everything is well seasoned, pour in the chicken broth trying to avoid directly pouring it onto the chicken to keep as much of the seasoning on the chicken and potatoes as possible.

Once everything is in the Instant Pot, place the lid on and turn the knob to the “SEALING” position. Then, press the “MANUAL” or “PRESSURE” button and set the timer to 13 minutes.

Pro tip: Remember that it will take 10-15 minutes for the Instant Pot to come to pressure, so be sure to plan accordingly!

When the timer runs out, you’ll need to do a quick release by turning the knob to the “VENTING” position to release the pressure.

The pin will drop once all the pressure is out, then you will know its safe to remove the lid.

Next, remove the chicken and potatoes from the Instant Pot and put them into a large bowl and set them aside.

In a small bowl, mix together the remaining ranch dressing, Parmesan cheese, and the melted butter until everything is well incorporated. Drizzle this mixture over the chicken.

Ingredients

  • pounds chicken breast
  • 3 pounds baby red potatoes quartered
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ¾ teaspoon ground black pepper (more or less to taste)
  • teaspoons garlic powder
  • teaspoon dried thyme
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • 1 ounce dry ranch dressing mix 1 packet, divided
  • 15 ounces chicken broth 1 can
  • ¼ cup grated parmesan cheese
  • ¼ cup butter melted

Instructions

  • Add chicken and potatoes to Instant Pot and drizzle with olive oil. Toss chicken and potatoes until they are coated with oil.

  • In a small bowl, mix together salt, pepper, garlic powder, thyme, basil, oregano, and half of the dry ranch dressing mix. Sprinkle seasonings over chicken and potatoes, then toss gently to coat.

  • Pour chicken broth into the Instant Pot (try to pour it to the sides of the chicken and potatoes so that you don't rinse off the seasonings).

  • Place the lid on top of the Instant Pot and set the valve on top to sealing. Press the "MANUAL" button and set the timer for 13 minutes.

  • Remember that it will take 10-15 minutes for the Instant Pot to come to pressure, so be sure to plan accordingly!

  • When the Instant Pot is finished cooking, do a "quick release" of the pressure. Remove the chicken and potatoes to a large bowl or serving platter.

  • In another small bowl, mix together remaining ranch dressing mix, Parmesan cheese, and melted butter. Drizzle butter/seasoning mix over the chicken and serve.

    The potatoes are quartered and we laid the chicken breasts in whole. But if your chicken breasts are really big, you can cut them in half.

    Love this recipe, its fantastic! This was my first time using a instant pot too. When you get to the part where its done and you have to move to large bowl or platter...Should you remove the chicken and potatoes with a spoon? There was a ton of liquid left and I was just thinking pour out. So I separated the liquid and then put it in the large bowl. This will definitely be a go to recipe!

    Cook time is 16 minutes. But before the 16 minutes begins counting down it will need to come to pressure. That can take about 10 minutes.

    Or you could dissolve a tablespoon of corn starch in small amount of cold water and stir it into the pot liquid after removing the chicken and potatoes. Bring to a boil on Saute until it thickens into a nice gravy. Ymmm!

    Such an easy dinner as the ingredients are all kitchen staples, and the chicken is fabulous. There is a lot of liquid in the pot once you remove the potatoes and chicken, so I put the instant pot on sauté and added a corn starch/cold water slurry and let the liquid thicken. That turned out to be a nice addition to the Parmesan topping. I’ll definitely be making this dish again. Thank you for a great recipe!

    Is the two Tbs a typo? one package of ranch dressing mix doesn't add up to that, let alone enough to have some left to make the butter/seasoning mix. I had about 1 and 1/3 Tbs out of a one oz package of ranch dressing mix.

    I’m confused. The recipe says1 ounce of ranch dressing mix divided (which is about 2 tbs), but then it says to use 2 tbs in coating chicken and potatoes in pot. So, is the recipe for 2 1-ounce packages, totaling 4 tablespoons? Or does it only total 2 tablespoons for the recipe?

    I loved this and so did the family, however 16 minutes seems way to long to cook considering i only cook thighs and potatoes for 9mins and pork chops for 4 or 5mins. Anyway i used pork loin cut to breast sizes cause that's what i had and added some half small onions from my garden with potatoes and cooked at hp for 5mins. It was crazy good and will definently be one of my go to's.

    I've made this meal 2x's now and I can't say I love it. 1 star for the flavor but I'm not a fan otherwise... It turned out overcooked both times after cooking for 13 minutes, the portions are really wacky if you don't make it exactly as pictured which the recipe itself doesn't clarify, and the potatoes turn out waterlogged and tasteless come the end...

    Loved it! This is the first thing I’ve made in my IP since it just arrived today. Idk what these ppl did that hated it or it came out wrong, but I followed the recipe and ALL instructions (which are very clear) and it came out perfect! My chicken was still frozen so I added 3 mins to cook time and they are amazing and done and delicious. All the steps are clear and there to follow! If you don’t see them, maybe scroll up or down and read everything before you start or before leaving a mean comment. Both the meat and potatoes are well seasoned and I added a little cornstarch (pre mixed w cold water until smooth) then added to remaining juice and made gravy. Will make again. Thanks!
