This gluten-free protein powder peanut butter cookie has all of the great taste of a traditional peanut butter cookie, but none of the guilt. Takes just a few minutes to mix together a batch of warm, yummy cookies.

These Protein Peanut Butter Cookies are gluten-free, low carb, and delish.

I love to keep these Protein Peanut Butter Cookies on hand (usually in the freezer!) for a satisfying sweet bite.

They are flour-less, sugar-free, gluten-free, and low carb.

Even though they are super simple to make - about 20 minutes from start to finish - there are some tips to make the cookies turn out great.

Choose a high quality smooth, no-sugar-added peanut butter.

Using regular ol’ Jif or Skippy peanut butter (with added oils and sugar) will work. You’ll have a delicious cookie, but you will have extra sugar. I like to use a no-sugar added peanut butter like Kirkland Organic Creamy Peanut Butter, or Crazy Richard’s Non-GMO Creamy Peanut Butter. (I order my peanut butter straight from Amazon, but you can find good quality brands at most local grocery stores. Take a peek in the health food section if you don’t see no-sugar added peanut butter with the regular brands.

Choose a delicious, sweetened vanilla or peanut butter flavored protein powder.

I cannot emphasize enough - choose a delicious brand of protein powder. You know, the kind you would drink mixed with only water.

Plain hemp, pea protein, or unflavored collagen protein will not give you a fantastic result.

My go-to protein powder for this recipe is Vanilla Ice Cream flavor Syntha-6 whey protein. I use it in this recipe and also in my No-Bake Protein Peanut Butter Balls recipe.

Protein Peanut Butter Cookies freeze well.

Maybe it’s just me, but I have a hard time using moderation when I have fresh-baked cookies, even if they are reasonably healthy.

Store cookies in an airtight container for up to a week.

Or freeze for up to two months. Be sure to use a hard plastic, airtight container so your cookies don’t get broken.

This gluten-free protein powder peanut butter cookie has all of the great taste of a traditional peanut butter cookie, but none of the guilt.

Instructions:

  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper or a silicone baking mat.
  3. In a medium bowl, mix together the eggs, protein powder, peanut butter, and vanilla. Mix well until a ball of dough forms.
  4. Use a 1 ounce (medium) cookie scoop to scoop dough onto the prepared baking sheet. (If you don't have a cookie scoop, form about 2 tablespoons of dough into a ball and place on cookie sheet.
  5. Using a fork, press gently on each cookie to slightly flatten it, forming a criss-cross pattern.
  6. Bake 10-12 minutes until the cookies are set. They will be soft, but will firm up as they cool.
  7. Allow cookies to cool for 10 minutes before transferring to a wire rack to cool completely.

Notes:

Store cookies in airtight container for up to one week. Cookies can be frozen for up to two months. Package cookies in a plastic, airtight container to avoid breakage. Label with cookie type and date frozen.
