Sheet Pan Rice Krispie Treats Recipe

Feed a crowd with this large batch of Sheet Pan Rice Krispie Treats. Bulk recipe is perfect for potlucks, parties, and bake sales.

Ingredients

  • ¾ C Salted Butter
  • 1 & ½ Bags (16 oz bags) Mini Marshmallows
  • *Optional Vanilla Extract and/or food coloring
  • 15 Cups Rice Crispy Cereal

Instructions

**Before you begin, prepare a cookie sheet (half sheet pan) by greasing it with butter or adding non-stick foil to the bottom.**

  1. In a large pot, on medium heat, melt the butter. Add the marshmallows and stir occasionally until they have melted. Remove from heat.
  2. *If desired you can add 1 T of vanilla or other extract and/or any food coloring at this point, mix well.
  3. Then add the Rice Krispie Cereal. Mix until well coated and the marshmallow mixture is completely incorporated.
  4. Press into previously prepared cookie sheet and let cool at room temperature. DO NOT REFRIGERATE TO SPEED COOLING!
  5. Also, it works great to spread them out by laying a sheet of parchment paper over them (once you've scooped them into the pan) and flattening them out by rubbing your hands across the paper. Let set and then cut and serve.

Notes

If I make these at home, just for my family, I don't use the non-stick foil I just spray the pan with non-stick cooking spray or butter the pan...my sheet pans are old though so I mostly use the foil to hide how aged they look.

FAQ’s

Can you make rice crispy treats the night before?

Absolutely! Making Rice Krispie treats the night before is a fantastic idea to save time and ensure that they are ready to be enjoyed when you need them.

In fact, letting them sit overnight can actually enhance their flavor and texture. As the treats cool and set, the flavors have a chance to meld, resulting in a more cohesive and delicious treat.

To do this, simply follow your favorite Rice Krispie treats recipe as usual, press the mixture into the pan, and let it cool and set overnight. Once they’ve had time to fully firm up, you can cut them into squares or any desired shapes.

Store them in an airtight container or wrap them in plastic wrap to keep them fresh until you’re ready to serve.

Whether you’re preparing for a special occasion, a party, or just craving a delightful treat, making Rice Krispie treats the night before can simplify your schedule and ensure that you have a delicious snack ready to enjoy.

Why are my homemade rice crispy treats so hard?

Homemade Rice Krispie treats can sometimes turn out hard for a few reasons. Here are some possible factors that might be contributing to the hardness of your treats:

Overcooking the Marshmallow Mixture: One of the most common reasons for hard Rice Krispie treats is overcooking the marshmallow and butter mixture. If you heat the mixture for too long, it can become too dry and result in hard treats. When melting the marshmallows and butter together, be sure to remove the mixture from the heat as soon as the marshmallows are fully melted and smooth.

Using Too Much Cereal: Adding too much cereal to the marshmallow mixture can also lead to hard treats. Using the correct amount of cereal ensures that the treats have the right balance of sweetness and chewiness. Follow the recipe’s measurements closely to achieve the desired texture.

Compacting the Mixture Too Much: Pressing the mixture too firmly into the pan can also result in hard treats. While it’s important to press the mixture down to ensure it’s compact, pressing too hard can squeeze out the air and make the treats dense and tough.

Storage: Improper storage can cause Rice Krispie treats to become hard over time. Make sure to store them in an airtight container or wrap them tightly in plastic wrap to prevent moisture loss (once they have completely cooled to room temperature). To achieve the desired soft and chewy texture for your Rice Krispie treats, ensure that you’re following the recipe instructions closely, paying attention to cooking times, measurements, and the techniques used for mixing and shaping.

Refrigerator use: DO NOT PUT THEM IN THE FRIDGE TO SPEED SET UP… they will become rock hard, as any Krispie Treats recipe will, just practice a little patience and wait a little bit for perfection. It will be worth it I promise.

FAQs

What happens if you put too much butter in Rice Krispie Treats? ›

What happens if you put too much butter in Rice Krispies Treats? If you put too much butter in rice krispies treats they will become oily, the cereal will soak up the butter and the treats will become soggy, rather than crispy.

Why are my homemade rice crispy treats so hard? ›

If you melt the marshmallows too fast, it might result in a Rice Kripsy treat that is harder and crunchy than chewy. Take your time and let the butter and marshmallows melt slowly. Use an 8×8 or slightly smaller pan. Use a small and deep pan if you want thick and chewy rice Krispy treats.

How do you keep Rice Krispie Treats from falling apart? ›

How do you make rice crispy treats not fall apart? If your final product is falling apart, it could be because you're trying to cut when the dessert is too warm. Or, you may have added too many marshmallows. Place them in the fridge to firm up and try to slice again.

Can you use old marshmallows for Rice Krispie Treats? ›

Don't use old marshmallows.

Most importantly, they don't melt nearly as well. Instead of becoming soft and gooey, they melt into a one giant blob. → Follow this tip: Save the older marshmallows for hot cocoa and s'mores, and pick up a fresh bag of marshmallows to ensure a really great batch of rice krispie treats.

Why can't Muslims eat rice krispie treats? ›

What about Rice Crispy Treats that have marshmallows in them, are they Haram too? Yes, they also use gelatin from pork. All pig products like pork are Haram (forbidden) for Muslims to eat.

Why won't my rice crispy treats harden? ›

There are a couple of reasons your treats might have come out soggy or too soft. First, your cereal might be too old. Check the expiration and make sure the crispy rice cereal is nice and fresh for the best texture! Second, you may have used too much butter.

How do you fix soggy rice crispy treats? ›

Check your brand for the oil/water %. If it is too high this makes your cereal turn out soggy. Either try switching to butter or a margarine brand with a lower % of liquids.

How do you fix dry rice crispy treats? ›

Another addition that can bring Rice Krispie treats to a whole other level, and make them softer and more moist, is sweetened condensed milk. In fact, it can keep these sweets from being too dry and chewy from the moment that you bite into them.

What can you do with expired marshmallows? ›

Marshmallows don't really go “bad” that I am aware of. Personally, I would try to use them. You can soften hard marshmallows by dipping a sealed bag in a hot pot of water boiling for a couple of minutes. The expiration date is just a best by date.

Do you have to refrigerate Rice Krispie Treats after you make them? ›

Do Rice Crispy Treats Need to be Refrigerated? No. I recommend keeping these Rice Crispy Treats in an airtight container at room temperature. Refrigerating will make the marshmallow in them super hard, so I advise to leave them at room temperature.

Why are my rice crispy treats so sticky? ›

Too much marshmallow and butter can make a super sticky, wet or soggy slice, while too little makes a hard, dry or crumbly one. I recommend using a baking scale for my recipe to get the ratio JUST right, creating the perfect chewy but crispy Rice Krispie Squares. Melted marshmallow = sticky mess.

Can you freeze Rice Krispie Treats to keep them fresh? ›

If you want to store them for longer than two days, try freezing them. To Freeze: Allow these gooey Rice Krispie Treats to cool completely and cut them into squares. Freeze in an airtight container, or wrap each square in a piece of plastic wrap and place them in a gallon freezer bag. Freeze them for up to 3 months.

How many days in advance can you make rice crispy treats? ›

Allow to thaw at room temperature before serving. Make-ahead- I truly believe the best rice krispies are the ones fresh from the pan but if you want to make them in advance remember to make them no more than 3 days before you plan to serve them or freeze them right away.

What is a substitute for marshmallows in Rice Krispies? ›

The substitute breaks down like this: combine an inverted sugar (like syrup or honey) with a nut or seed butter to create a sweet adhesive for your Rice Krispy treats. Not only does this sticky mix work as a proper swap for marshmallows, but it also brings its own unique flavor to your crunchy bars.

How many days are homemade Rice Krispie treats good for? ›

- Store no more than two days at room temperature in airtight container. - To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.

What happens if I use too much butter when baking? ›

Too Much or Too Soft of Butter

If the butter yields too easily to pressure and appears melted and oily, it will produce a silky batter that rises too soon and collapses. Your cake will have big air pockets and an uneven texture.

What happens if you add too much butter? ›

Too much butter will result in a very soft, sticky dough that's difficult to shape, and bakes up greasy and dense.

What happens when you bake with too much butter? ›

Classic signs of a cookie with too much butter include crispy-bordering-on-burnt edges, a greasy surface, an excessively brittle texture, and a predominantly buttery flavor that overpowers the other caramel and chocolate notes.
